Apart of our olive oil series, this salmon in brown butter and lemon sauce is the perfect seafood entree for any night of the week.
Place the salmon filets in a deep dish and season with salt and pepper. Pour the 4 tbsp Colavita Olive Oil over the filets and sprinkle with the herbs and garlic. Allow to marinate at room temperature for 15 minutes.
Heat up a large sauté pan over medium heat. Once it is hot, add 2 tbsp Colavita Extra Virgin Olive Oil. Reduce the heat to medium-low. Scrape off the garlic and herbs from your salmon filets so they don’t burn in the pan.
Place the salmon filets top side down into the sauté pan. Cook (without moving the filets) until golden brown (about 4-5 minutes).
Flip the salmon, and sauté another 4-5 minutes for medium rare. Continue cooking if you like your salmon well-done.
Remove the salmon to a clean serving plate. Drain off any excess oil from the pan.
Add the butter to the pan and allow it to brown. It will bubble slightly and turn a caramel color. This should take about 2-3 minutes.
Once it has browned, add the lemon juice and stir to incorporate. Remove the sauce from the heat immediately and pour it over the salmon. Serve.
