In a pot cook bow tie pasta al dente, for 7 minutes. While the pasta is cooking, in a separate pan start sautéing the Italian sausage (make sure to break apart the sausage).
When the sausage is almost cooked through add garlic and olive oil.
Once the sausage is cooked fully (no longer pink) add cherry tomatoes, tomato paste, seasonings, and pasta water. Stir.
Next, add the pasta and spinach. Cook on low for 2 minutes or until the spinach wilts.
Serve immediately and enjoy.
