Turkey Sausage Pasta with Sun-dried Tomato Sauce
Heat the oil in a large pan over medium-low heat.
Add the sausage to the pan and sauté. As the sausage cooks, break it into small pieces with a wooden spoon. Cook until the sausage is browned and cooked through.
If too much fat has accumulated in the pan, you can drain it off, but leave about 2 tablespoons (a little fat goes a long way).
Add chopped onions and garlic and sauté about 3 minutes, until translucent.
Season with salt and pepper and add the dried oregano and hot pepper flakes.
Pour in the can of tomatoes.
Bring to a simmer and add the heavy cream.
Reduce the heat and cook to very low and simmer for 20 minutes.
In the meantime, bring a large pot of water to a boil.
Salt the water generously and add the pasta.
Cook until al dente (check package instructions).
Drain the pasta in a colander, and place the cooked, drained pasta into a large pasta serving bowl.
