A cool different way to enjoy pineapple! These grilled pineapple with coconut rum sauce will be the talk of any bbq you hold this summer!
Slice the pineapple and place on skewers. (Tip!! Soak the skewers for 30 mins prior to using to prevent them from burning)
Prepare the coconut rum sauce by combining the coconut milk, Colavita olive oil, cream of coconut and coconut rum into a small saucepan. Stir to combine. Place the saucepan over medium-low heat and add the cornstarch. Continue to stir until the sauce thickens, about 5 minutes.
Remove from the heat and let the sauce cool.
Lightly brush the pineapple with Colavita Olive Oil. Grill the pineapple for about 4 minutes on each side, until slightly blackened. Remove from the grill and place the pineapple skewers on a serving platter.
Serve with cooled coconut rum sauce and garnish with fresh mint
