This unique recipe of pumpkin seed brittle with sesame seeds is a great fall snack. What could be better than pumpkin seeds and sugar together?

1/2 cuplight corn syrup
1 1/2 cuppumpkin seeds
1 tspColavita Olive Oil
1 tspbaking soda
1/2 cupsesame seeds
1Prepare a baking sheet by lining it with parchment paper. Lightly oil the parchment with Colavita Olive Oil.
2Combine sugar, corn syrup and olive oil in a 2 quart bowl. Microwave on high for 3 minutes. Stir in pumpkin seeds and microwave on high for 3 more minutes. Stir in vanilla and microwave for 1 ½ minutes more.
3Remove bowl from microwave and add in baking soda, stirring constantly. The mixture will lighten in color.
4Pour the mixture onto the prepared baking sheet sheet.
5Sprinkle with sesame seeds.
6Your brittle will harden in about 15 minutes. Enjoy!
