Bring your leftovers from turkey day to life with this Thanksgiving leftover buddha bowl! Not only will you make a full meal in no time, you'll also make tons of room in your fridge.
Leftovers from Thanksgiving:
Green beans from the casserole, or other leftover vegetables such as Brussels sprouts or carrots
Sweet potatoes (roasted or mashed)
1 cup Colavita Cous Cous
½ cup pomegranate seeds
Avocado, sliced, divided 4 ways
Colavita Extra Virgin Olive Oil
Colavita Balsamic Glaze or Balsamic Raspberry Glaze
1Cook the cous cous according to package instructions and divide evenly between 4 bowls.
2To each bowl, add vegetables, turkey, and sweet potatoes.
3Garnish with avocado slices and pomegranate seeds.
4Drizzle each bowl with 1 tbsp Colavita Olive Oil and either Colavita Baslamic Glaze or Colavita Raspberry Balsamic Glaze.
