Vegetable Foil PacketsThese Vegetable Foil Packets may be our new favorite way to cook assorted veggies and keep them fresh and flavorful. It also assures that everyone gets their own little envelope of perfectly cooked veggies. We used a combination of carrots, zucchini, potatoes and onion for our mix, but the star is truly the roasted garlic which adds flavor and aroma to the other vegetables.
